Soooo I know I promised no dessert recipes during our Whole30, BUT this recipe is TOO good not to share with you guys. Trust me. You’ll thank me later. Yes you will. Speaking of Whole30, how is it going?! Mine is going really good! I’m so proud of myself. Yesterday Jasmine and Stacy La-La came over for a bake day! The dress code was pajamas, no makeup, and workout buns. The soundtrack was Dirty Dancing, and the chick flicks were Pretty in Pink and Grease. I know. It was so awesome. I made tortilla chips from the new Against All Grain cookbook with guacamole for dipping. Jasmine made an amazing pumpkin soup with a bacon, onion, and celery garnish. Stacy made my Paleo Browned-Butter SnickerDROOLdles and my Paleo German Chocolate Cupcakes. I stayed so strong you guys. I didn’t even lick one or anything. Trust me, all I wanted to do was sink my teeth in a warm ooey gooey chocolate cupcake but in the words of New Kids on the Block I was “Hangin’ Tough”.

So anyway the whole point of that story was to say sorry for posting a dessert but you’re going to need recipes for when the Whole30 is over, I just know it. So why not try these Pumpkin Swirl Cheesecake Squares. Did you see how pretty my swirls were? I was very proud of myself. These would be so great to take to Thanksgiving dinner. You would be like the star of the show! Everyone would “oooh” and “awe” and all of your friends and family would fight over who gets the last slice. (Insert mental image here of total Thanksgiving rumble taking place in the dining room. Turkey and stuffing flying everywhere. Dishes breaking, hair pulling, shirts stained with cranberry sauce, and you, victorious, holding the last Pumpkin Swirl Cheesecake Square.) Oh and did I mention they are vegan and no-bake?!

    • Tall! I made Stacy eat one in front of me while I watched. It was kind of like porn. Weird. Is this a family blog? I feel like I can’t say porn on it. I told George about Stacy putting the metal bowl in the microwave. Supervised baking! Anyway here’s to us for staying strong during our Whole30!

  3. So, you know I’m in Sydney, right? You know we don’t celebrate Thanksgiving down here, yes? And, there’s no way I’m doing a Whole30 in the month of my birthday… Just saying there is NO reason I can’t indulge. That’s all.

    • TSL I feel like we’ve had this discussion before and I believe I told you and LM to come visit me for Thanksgiving in sunny San Diego! Thanksgiving is so much fun! It’s a day where we all stuff our faces until we’re sick and have to unbutton our pants. Some of us skip right over that process by just wearing sweats to the dinner table. (Who me?) It’s the one day of the year (or so we tell ourselves) that we can eat whatever we want without hesitation. Then we wake up really early the next morning and go shopping to hit the best sales of the year and fight with total strangers over parking spots and places in line. Now that I think about it, it’s probably best that you don’t celebrate it. Last year I made Paleo stuffing and a Paleo pumpkin pie though and it was really tasty. :)

    Hey, I made these a year ago and they were so great! But I’m curious if I could bake it? I made a similar “cheesecake” recipe today, but it didn’t have the zukes and it baked for about 30 mins in a 8×8 pan. We all agreed that this one was definitely the winner! but the totally frozen texture didn’t suit me. anyway, if you have any suggestions I would love to hear! and if not, we will still make it again anyway :) thanks!

    • I have never tried baking it, I think it would just melt into a gooey mess. I’m so happy to hear that you liked it though! Have you tried thawing it to close to room temp instead of eating frozen? That’s what I do. :)

        Yea, I let it thaw a bit..but sometimes it’s so hard to wait! :) So, now I’m thinking – I’m going to experiment adding some egg and taking out a little bit of the zukes. I’ll let you know how it goes if you’re curious! Thanks again for the great recipe, we all love it.

  9. i have looked and looked over this page and can’t find the recipe anywhere that is what i don’t like about pinetrest finding the recipes was hoping to make this today but guess not :(
