Soooo I know I promised no dessert recipes during our Whole30, BUT this recipe is TOO good not to share with you guys. Trust me. You’ll thank me later. Yes you will. Speaking of Whole30, how is it going?! Mine is going really good! I’m so proud of myself. Yesterday Jasmine and Stacy La-La came over for a bake day! The dress code was pajamas, no makeup, and workout buns. The soundtrack was Dirty Dancing, and the chick flicks were Pretty in Pink and Grease. I know. It was so awesome. I made tortilla chips from the new Against All Grain cookbook with guacamole for dipping. Jasmine made an amazing pumpkin soup with a bacon, onion, and celery garnish. Stacy made my Paleo Browned-Butter SnickerDROOLdles and my Paleo German Chocolate Cupcakes. I stayed so strong you guys. I didn’t even lick one or anything. Trust me, all I wanted to do was sink my teeth in a warm ooey gooey chocolate cupcake but in the words of New Kids on the Block I was “Hangin’ Tough”.
So anyway the whole point of that story was to say sorry for posting a dessert but you’re going to need recipes for when the Whole30 is over, I just know it. So why not try these Pumpkin Swirl Cheesecake Squares. Did you see how pretty my swirls were? I was very proud of myself. These would be so great to take to Thanksgiving dinner. You would be like the star of the show! Everyone would “oooh” and “awe” and all of your friends and family would fight over who gets the last slice. (Insert mental image here of total Thanksgiving rumble taking place in the dining room. Turkey and stuffing flying everywhere. Dishes breaking, hair pulling, shirts stained with cranberry sauce, and you, victorious, holding the last Pumpkin Swirl Cheesecake Square.) Oh and did I mention they are vegan and no-bake?!
