I’m sorry. Did you see how freaking cute this cupcake is? It has a bat in it. A bat people! You guys it’s almost Halloween! Who else is excited? All I want to do is go to a party and bring these cute bat cupcakes. Are you having a Halloween party? Can you invite me? Why not? Oh because I’m on my Whole30 Day 16? But…but…I made cupcakes.
Okay so before you yell at me for posting yet ANOTHER dessert recipe during our Whole30 when I promised you I wouldn’t, let me just explain and give you my rock solid reasoning behind it. First of all did you see the bat? Look at the bat it’s cute, how could I deny you the pleasure? That would be just plain mean. Second of all this was a guest post that I did for none other than the ultra talented and famous PaleOMG! This is KINDA a big deal people. Like the only thing bigger than this would be Martha Stewart asking me to do a Halloween spread in her magazine. “Oh Martha of course, I’d love to!”
When I first started eating Paleo way back in the dark ages of 2012, PaleOMG was the first blog that I started reading and cooking from. I remember thinking Juli was so cool for coming up with all these delicious recipes and then sharing them with the world along with funny stories about periods, boys, alcohol, jeans and the rest of the BS us women go through on the daily. I totally had a girl crush on her. I seriously admired the crap out her. And then guess what?! Come a year later and I’m doing a guest blog post for her! Not only that but we’re like total BFF’s. I get to see her and George later this week (insert happy dance) and I can’t even wait! I like to think they have me come visit and recipe taste because of my charming sense of humor and really cute boots, but I think actually they’re just using me for my Paleo Chocolate Molten Lava Cake. Eh, you win some you lose some. Everyone is a winner though with Chocolate Molten Lava Cake…that I can’t eat. Because I’m on Day 16 of my Whole30. Damn you Whole30.
SO unless you’ve been living in a barn for the last two weeks you must have heard the BIG news by now, Juli and George are working on a cookbook together! It’s called The Paleo Kitchen: Finding Primal Joy in Modern Cooking and you can pre-order it here, here, and here. I’m not sure if you remember or not, but way back on my Paleo Chocolate Pizza with Cocoa Cauliflower Crust post I mentioned that I was under a verbal NDA and I wanted to tell you guys something so bad but I couldn’t? Well…I was recipe taste testing for their book! I brought them my Paleo Reese’s Cheesecake with Fauxreo Crust and ever since then it’s just been tradition for me to bring dessert. Now all they want is my Paleo Chocolate Molten Lava Cake. Seriously. I literally texted them, “What do you guys want for dessert, here are your menu options…” And they both text back, “Molten Lava Cake.” The cookbook writers get what the cookbook writers want! I even offered them my pretty bat cupcakes. You saw the bat right? It’s a freaking bat…on a cupcake.
In all seriousness these cupcakes are so fun because you could really use anything as decor in the frosting, zombie brains, eye balls, rats, spiders, what have you. The possibilities are endless and delicious. Well kind of, if you consider zombie brains delicious.

You should definitely make them for LM, as a Halloween treat. Also they would make good “just because” cupcakes or even better “I’m sorry :(” cupcakes. Not that you’d ever do anything to upset LM. π

October 25, 2013 at 8:40 am (10 years ago)Yes! Just melt some more Enjoy Life Chocolate Chips and throw some of the pumpkin spice frosting fail in and mix together, then spread on top of the cupcakes like normal store bought chocolate frosting. π Let me know how it goes!
