So you may have noticed that there is no recipe accompanying these delicious looking Hazelnut Butter Cookie Sandwiches. You’re probably thinking what the
H.E.double hockey sticks, what’s going on? Well there is a reason for this, I promise. And that reason is: Oh my gosh did you finish watching Season 2 of Orange is the New Black? It was so good! The Season Finale was the best, right?!

I kid…I kid! Okay the real reason there is no recipe included in today’s blog post is because: I’M WRITING A COOKBOOK!!! Eek! All the contracts have been signed, all the immediate panic and self-doubt has subsided, and all of my recipe ideas are in a little pink college ruled notebook that never leaves my side. And also in my iPhone. It’s totally full of rando notes that I leave myself about the book, whether it be recipe names, weird recipe ideas from my burnout friends, or shopping lists. It’s quite handy. There isn’t enough room in my brain to store all that info.

So basically the book is going to consist of 125-150 paleo-inspiried recipes, both sweet and savory, including these little hazelnut gems, just for you guys. I will be sure to have recipes in it that are for everyone, from nut-free and dairy-free, to egg-free. There will also be recipes that are Primal (include high-quality dairy) and recipes that are more gluten-free than actual Paleo. I really want this book to have something for everyone and be all encompassing. I’m so excited and I just can’t hide it. Can you tell? You totally can’t right? I thought so.

So far the book has been a ton of work. It’s like I have two full time jobs, my real day job that I work at from 8am-5pm, then I get to go to the gym for an hour, and then it’s straight home to baking. I get in bed about 11:30pm and do it all over again the next day. I try to take Sundays as my day off, but then I wake up thinking about cookies and ganache and then I get up and end up working anyway. It’s a labor of love I guess, no rest for the wicked. It took me 8 times to get my Soft Batch Chocolate Chip Cookie recipe for the book just right. I went through 16 bags of chocolate chips and 10 pounds of almond flour in one week. ONE. WEEK. I want this book to be perfect!

Over the next few months it’s going to be really hard to get non-book recipes out to you guys, but I promise you I will try my best. Hang in there. I’m only one person, with a full-time day job in addition to the blog, I don’t have a team of assistants, so I can’t delegate work or recipe development. I’m just one gal wearing an ugly apron and working in a tiny kitchen with no dishwasher, knives that haven’t been sharp for 10 years, and an oven with major hot spots that has crooked burners on the left side. I will definitely be updating you guys on the cookbook process and sharing teaser shots on social media, so if you don’t already, be sure to follow me for behind the scenes action. You guys are why I do this. Without you none of this would be possible, you have my undying love and sincere thanks for helping to make this dream come true. I never thought in a million years when I first started this blog that one day I would be writing a cookbook. I also want to thank my fellow bloggers. I have only succeeded as a Paleo food blogger because I’ve had the support of other great Paleo food bloggers. Okay are we done being sappy yet? I know, geeze.

      Thank you so much! I am beyond thrilled to have such an amazing opportunity! And the cookies are really good! They have the consistency of a Nilla wafer. 😉 The chocolate is my favorite part though. Haha. I will also be using them in a Banana Cream Pudding recipe!

(Well, besides YUM) “Why the heck doesn’t this girl have a cookbook for her beautiful recipes and amazing food styling/photography?
